It is after three in the morning and I can't sleep. I am so bord being up here all by myself so I thought what the heck....I will post on xanga. But I really don't have anything to say...what a sad sad night.

Well I ahave decided that the best way to reach my fitness goals is to totally surround myself with everything GOOD. So I have become a FitTv junkie and have been actually trying a few of the recipes off of Blaines Low Carb Kitchen. I have decied to share the ones that I actually like. SO here we go:

Low Carb Fried Chicken
 
small text 
12 pieces Chicken - (thighs, legs, wings and breast)
1/2 cup hot sauce
1 tsp. salt
1 tsp. black pepper
1 tsp. white pepper
1 cup soy flour
1/2 cup ground pork rinds - ground fine
Peanut oil to fry
Plastic storage bag or paper bag
10" cast iron pan

Wash chicken pieces with cold water then pat dry. Put pieces on wire rack over cookie sheet and season with salt and pepper. Pour hot sauce evenly over chicken, cover with plastic wrap and place chicken in refrigerator over night. Preheat cast iron pan over medium-high heat with enough peanut oil to fill pan 1 1/2 inches. Mix pork rinds with soy flour, 1/2 tsp. salt, 1/2 tsp. black pepper and 1/2 tsp. white pepper in plastic trash bag. Test oil with a sprinkle of flour from the bag (360 degrees on Thermometer). It should brown in a couple seconds. 

Place chicken pieces 2 - 3 at a time in bag with flour (shake off excess flour) and fry chicken pieces 4-6 minutes each side in hot oil (do not crowd pan). Place chicken on wire rack over cookie sheet in 275-degree oven until entire batch is finished. Add more oil to cast iron pan when necessary, as each batch will absorb oil. Make sure you allow oil to get hot once you add more. Leave chicken in oven to stay hot while you prepare ham and collards.

Yields 6 Serving (two pieces of chicken) - approximately 2 carbs per serving
 
 
 
 
I like his list of low carb substitutions ...so here they are:
 
soy flour for wheat flour

artificial sweeteners (such as Splenda) for sugar

cauliflower for rice and potatoes

pork rinds for bread crumbs

spaghetti squash for pasta

lettuce leaves or flatbread for bread (for with sandwiches)

cheesecake for pie

celery for snack crackers (use with dips, peanut butter or cream cheese)

heavy cream for milk
 
 
Just thought that if someone else is having the same probs that I am having in staying away from the fatty things ...then maybe this would help. I guess that will be all for right now. May try and update again later. Byebye!!

I have had my new sectionalfor about four days now and I still love it. Usually I pick at things and seem to find something about  them that I don't like but so far I can't find anything wrong here. Hannah referrs to it as her * big chair*...cute huh? I am finally getting the house to look the  way I want it to. It has taken me a little over three years to get my own taste all through the house ( except the bathroom) and now that it has all been done Bruce is wanting to build on and knock out a few of our existing walls. Isn't that just like a man?....Just when everything is finally falling into place they wanna change it and make it bigger. Well here is a pic of the setional anyway ...and I will try and put up the progress pics of the remodeling as it happens.Well I guess thats gonna be all for today kids.Byebye!!

It has been awhile since I last updated but I have been pretty busy here lately. My mother-in-law is coming in this coming week end and I have been trying to get everything back in order around here. I had been doing a little spring cleaning so needless to say this place is a mess. Plus I have actually had the opportunity to go a ferw places with Bruce so I have taken advantage of that. Even though we a re married it seems that we never get to just get out and run around together anymore...so when we do it is a treat.

The baby is growing so fast ...we brung her home at 5 lbs even and now she is 7 1/2 lbs and 19 inches long. I can't believe how big she is getting. She has also changed her looks alot already. I know that I should be putting new pics on here instead of just telling ya about it....and don't worry I will update those soon.

Hannah is getting to be such a big girl. Here lately she is very interested in cleaning house. I know this is just a faze. She will soon grow up and realize that house work is acually evil and won't do it anymore. So I guess I best enjoy it while I can....lol.

We are starting to make our plans for vacation and I have decided that no matter where we go I am going to HAVE to get in a alittle better shape before then. I still have some baby flab that needs to go bye bye and I really really need to get my white ass to a tanning bed. So much to do and so little time to do it in. OH WELL ....I better go...will update again soon. Byebye!!

Well it is ending yet another day in the Workman house. I have managed to get alot done today in my spring cleaning. Figured I would go ahead and get it done while it was still chilly out so I could get out and enjoy the good weather later. It was a beautiful day today but not as nearly as pretty as yesterday. Yesterday evening we took Hannah to play at the playground and she made a play friend....so now I am suppose to take her down there onced or twiced a week to play with this little girl. They were just so cute together and I think this will be good for Hannah also. She has like no one to play with and I feel sorry for her sometimes when I see her playing and laughing all by herself.

I am thinking about applying to ashland for school starting this summer. I really need to go ahead with my schooling but I just don't wanna return to Marshall. I like it there and everything but they are just so hard to deal with. I was going into PTA but I believe if I go to Ashland I will go ahead and do Nursing. aslong as I am in the medical field I believe I will be happy. Even this way I could go on to specialize in a certain thing (labor and delivery  or Peds.). AS long as I can work with children in some way I will be okay.

On another note we are finally getting our credit cards payed off. Take my advice if ya don't have them ....don't get them. They are nothing but a pain in the ass. Sure they are ok when you are out buying everything but when those bills start rolling in with all of those finance charges on them ....well then its not so pretty.Well I guess that will be all for now ....gotta go and get Bruce out to work.
